About me

Having worked as a chef for the last 12 years I have developed a true passion for creating wonderful dishes.  Working predominantly in Michelin-starred restaurants in London and Amsterdam I have now returned back home to Guernsey where I am drawing on experiences from around the world and sharing my love of food with you.

 

Sourcing as many local, seasonal ingredients as possible and indeed growing a wide range of fruits, vegetables, edible flowers and herbs myself I am focused on bringing you a real plant-to-plate experience.  If I haven’t been able to grow, forage or find locally I still truly believe in the importance of sourcing good-quality ingredients (such as organic free-range meats) and this level of sustainability is an ethos that I bring with me into my dishes and something I believe you can really taste.

 

Having worked in busy kitchens I’ve observed there’s a formality to fine dining which I feel can be avoided in the comfort of a home environment.The focus becomes less on the surroundings and more on the great food presented to you at your table and the guests that you have chosen to invite.There is also something to be said for the intimacy and privacy of such events whether it be a cosy relaxed evening with friends or a discreet private meeting with clients away from public eyes.

 

I take great joy in preparing a bespoke menu for each event that I cook at, for me, this sparks real creativity and avoids the restrictiveness of a restaurant menu. I want my guests to leave feeling content, full and inspired by the dishes they have eaten and am excited to speak to you about what I can cook for you - taking you on a culinary journey, one plate at a time.
